There are a bunch, the Soldner X games you could get on sale. Not sure if they still offer that.
Are there any on physical media? Answers on a the back of a surreal postcard to "Sony release some 2D games on Blu Ray discs"...
There are none on physical media. Get a Japanese Xbox 360 and be happy. What 2D-shooters are concerned, the 360 is the new PC-Engine and Sega Saturn.

Yes, and only Söldner X2 is any good. Still, it's boring in my opinion if you compare it with really good horizontal shooters like Gradius V. The graphics are nice and they improved many things that were criticized on the first game, but the gameplay is still very euroshmup'ish.

The only decent 2D shooter I know for PS3 (but it's for downloading from Playstation Network) is GUNDEMONIUM collection which is also available for PC (actually, it first came for PC):

But just like ppl said, X-Box 360 should be your choice for 2D shooters. Or if you have Wii you should check VirtualConsole games for TurboGrafx-16/PC Engine.
