I've been wondering about how to do this for a while and I've been looking for a detailed guide but so far all I have found are tuts for modchipped consoles. I would be great full if someone could walk me through it or point me in the direction to a good guide

Well let me start off by warning you its better to have a dedicated development console. You will lose the M$ dash by doing this (i think). You will lose live untill you put the M$ dash back on. You will have hardly any free space on a stock hard drive. Its not even worth it unless you have a fair amount of space. You will need to clear some hdd space if you actually want to work on a project and do somthing. This means getting rid of games on the stock hdd. Again I have never ran XDK on a softmod but I would advise against it.
But if you must: http://www.xbox-scene.com/articles/debug-xdk.php
When you use a softmod you have to use all sorts of bios loaders and extra bullshit that can be simplified just by installing a chip and flashing a bios.
Using a modchip would be 1000% better and easier. Seriously they are dirt cheap.
Im strongly against using a softmod.

Can you capture video using homebrew instead of using the XDK?

The best way to capture video is using a video capture card for a pc. A xbox will freeze up like a beast with 64 MB's of ram when capturing video. It also takes way too long to transfer the cached frames if you use that method.
There is a program named Xbox Image Grabber. It loads a debug bios to capture pictures not video. I think it still uses / requires things out of the xbox SDK, it's a pc application. I'm not entirely sure how it works. Give it a run on google. But as far as video there is no homebrew programs that are capable of captuing video on the xbox.

You can still have the Xbox dash. My modded xbox has the XDK, Xbox Dash (for full live support), and XBMC dash installed.
And video with the XDK lacks sound and is of a poor framerate, look at the Halo video on my site for an example.

You can easily disable a softmod and when you softmod you still retain the original dash.

I totally agree.Use a modchip or just flash the TSOP,or better yet just buy a xbox debug kit, there pretty cheap now.

Most online retailers have quit offering xbox modchips since the recent crackdown here in the US, but there are still some that offer xbox chips.
This is the cheapest place I could find:
http://www.kanection.co.uk/section.php/27/1/xbox-mod-chips
The xecuter 2.6 chips are £19.99 inc. VAT. Xecuter 3 CE's are £39.99 inc. VAT.
